- 1 teaspoon olive oil
- 1/4 cup diced shallot
- 1 cup jasmine rice
- 1/2 teaspoon kosher salt or to taste
- 1/2 teaspoon garlic powder
- 1 1/2 cups low sodium chicken broth or vegetable broth
- zest of a lemon
- 2 tablespoons fresh lemon juice
- 1–2 tablespoons chopped fresh dill
Instructions
- Heat olive oil in a saucepan over medium-high heat.
- Add shallots and sauté for 30 seconds.
- Stir in jasmine rice, garlic powder, and salt; toast for 30-60 seconds.
- Pour in chicken or vegetable broth and lemon zest; bring to a boil.
- Cover and reduce heat to low; cook for 15-20 minutes.
- Remove from heat and let stand covered for 5-10 minutes.
- Stir in lemon juice and chopped dill; season to taste.
Notes
For a stronger lemon flavor, add more lemon juice or zest.
Fresh dill can be replaced with dried dill in a pinch, but use half the amount.
This dish pairs well with grilled chicken or fish.
