- 1 cup butter
- 1 cup sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1 1/2 cups sugar
- 1 cup flour
- 4 eggs
- zest of 2 lemons
- 1/2 cup lemon juice
- powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×13 pan with parchment paper.
- In a medium bowl, mix together the butter, sugar, and vanilla for the crust.
- Add the flour to the mixture and stir to combine well.
- Press the crust mixture firmly into the prepared pan and bake for 15-20 minutes until the edges are lightly browned.
- For the filling, add sugar and flour to a large bowl and whisk to eliminate lumps.
- Whisk in the eggs, lemon zest, and lemon juice until fully mixed.
- Pour the lemon filling over the warm crust and bake for 30-35 minutes until the center is set and no longer jiggles.
- Allow the bars to cool completely at room temperature before chilling in the refrigerator.
- Before serving, dust with powdered sugar.
