Description

These Key Lime Pie Bars are a delightful treat with their creamy filling and crunchy crust, perfect for those craving a sweet dessert. Made with fresh key lime juice and a graham cracker base, they’re easy to prepare and deliciously satisfying, making them a favorite for gatherings or a sweet personal indulgence.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 6 tablespoons salted butter, melted
  • 28 ounces sweetened condensed milk
  • ½ cup sour cream
  • 4 large egg yolks
  • ¾ cup key lime juice
  • ¼ teaspoon pure vanilla extract
  • 2 teaspoons lime zest (optional)

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Line a 9” square baking dish with parchment paper, ensuring handles are left for easy removal, then lightly grease the parchment paper.
  3. In a bowl, mix the graham cracker crumbs, granulated sugar, ground cinnamon, and melted butter until combined.
  4. Press the graham cracker mixture tightly into the bottom of the prepared baking dish to form an even layer for the crust.
  5. In another bowl, whisk together the sweetened condensed milk, sour cream, egg yolks, key lime juice, vanilla extract, and lime zest until the mixture is smooth.
  6. Pour the key lime filling over the crust in the baking dish, spreading evenly.
  7. Bake in the preheated oven for 15-20 minutes until the filling is just set but still slightly jiggly in the center.
  8. Remove from the oven and cool at room temperature.
  9. Once cool, refrigerate for at least 2 hours to chill before slicing into bars.

Notes

Allow the bars to chill thoroughly for the best texture.
Use fresh key limes for a brighter flavor.
Store any leftovers in an airtight container in the fridge.
