- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons salted butter, melted
- 28 ounces sweetened condensed milk
- ½ cup sour cream
- 4 large egg yolks
- ¾ cup key lime juice
- ¼ teaspoon pure vanilla extract
- 2 teaspoons lime zest (optional)
Instructions
- Preheat the oven to 350°F (177°C).
- Line a 9” square baking dish with parchment paper, ensuring handles are left for easy removal, then lightly grease the parchment paper.
- In a bowl, mix the graham cracker crumbs, granulated sugar, ground cinnamon, and melted butter until combined.
- Press the graham cracker mixture tightly into the bottom of the prepared baking dish to form an even layer for the crust.
- In another bowl, whisk together the sweetened condensed milk, sour cream, egg yolks, key lime juice, vanilla extract, and lime zest until the mixture is smooth.
- Pour the key lime filling over the crust in the baking dish, spreading evenly.
- Bake in the preheated oven for 15-20 minutes until the filling is just set but still slightly jiggly in the center.
- Remove from the oven and cool at room temperature.
- Once cool, refrigerate for at least 2 hours to chill before slicing into bars.
