Description

This Juicy Grilled Tequila Lime Marinated Chicken is packed with irresistible flavors, featuring tequila and lime. It’s simple to prepare, making it a perfect choice for a quick, flavorful dinner.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro (or fresh chopped)
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder (or tomato paste)
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place chicken thighs in a large resealable plastic bag or bowl.
  2. Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder/paste, chipotle powder, and salt/pepper to the chicken.
  3. Massage the mixture into the chicken until well combined and coated.
  4. Seal the bag or cover the bowl and refrigerate to marinate for at least 2 hours or overnight.
  5. Before grilling, let the marinated chicken sit out to come to room temperature.
  6. Preheat the grill to medium-high heat (375-450°F) and grease the grates.
  7. Place chicken thighs on the hot grill and grill for about 4-5 minutes per side until they reach 165°F.
  8. Remove from the grill and let the chicken rest, tented with foil, for at least 10 minutes.
  9. For stovetop grilling, preheat a grill pan over medium heat and brush with oil.
  10. Place chicken in batches on the hot grill pan and cook for about 5-7 minutes per side until they reach 165°F.
  11. Remove from the grill pan and place on a serving platter, adding oil as needed between batches.
  12. Garnish with sliced lime wedges and cilantro if desired.

Notes

For the best flavor, marinate the chicken overnight.
Use a meat thermometer to ensure the chicken reaches a safe internal temperature.
Serve with your favorite sides for a complete meal.
