Ingredients

  • 2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup bbq sauce
  • 1/4 cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 head romaine lettuce, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickled onions
  • 1/4 cup chopped cilantro
  • 1/4 cup ranch dressing

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt, pepper, paprika, and garlic powder, then add to the skillet.
  4. Cook the chicken for 6-7 minutes on each side until fully cooked.
  5. Remove chicken and shred it using two forks.
  6. In the same skillet, mix the BBQ sauce and honey, then return the shredded chicken to the skillet to coat.
  7. Prepare individual bowls with rice, black beans, corn, and shredded lettuce.
  8. Top each bowl with BBQ chicken, cheddar cheese, pickled onions, cilantro, and ranch dressing.

Notes

You can use pre-cooked chicken to save time.
Feel free to add your favorite toppings such as avocado or jalapeños.
This dish can be easily customized with different grains or beans.
