- 1 cup bbq sauce
- 1/4 cup honey
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 cup ranch dressing
Instructions
- Cook the rice according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Season chicken breasts with salt, pepper, paprika, and garlic powder, then add to the skillet.
- Cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove chicken and shred it using two forks.
- In the same skillet, mix the BBQ sauce and honey, then return the shredded chicken to the skillet to coat.
- Prepare individual bowls with rice, black beans, corn, and shredded lettuce.
- Top each bowl with BBQ chicken, cheddar cheese, pickled onions, cilantro, and ranch dressing.
