Ingredients

Scale
  • 2 tablespoons olive oil
  • 3 cloves garlic, grated on a Microplane
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 28 oz crushed tomatoes
  • 1 teaspoon sugar
  • 1 tablespoon unsalted butter
  • Kosher salt and freshly ground pepper, to taste

Instructions

  1. In a saucepan, heat the olive oil over medium heat.
  2. Add the grated garlic and cook for about 2 minutes, stirring frequently until it becomes fragrant.
  3. Stir in the oregano and crushed red pepper, cooking for an additional minute.
  4. Once fragrant, add the crushed tomatoes and sugar, reducing the heat to low.
  5. Allow the sauce to simmer for 20 minutes until it thickens.
  6. Mix in the butter and season to taste with kosher salt and freshly ground pepper before letting it cool to room temperature.

Notes

For a spicier sauce, increase the amount of crushed red pepper flakes.
This sauce can be stored in an airtight container in the refrigerator for up to a week.
Consider using fresh herbs for a brighter flavor profile.
