Description

This Healthy Grilled Chicken Cobb Salad with Honey Dijon Dressing is a delightful blend of grilled chicken, fresh vegetables, and a tangy dressing, perfect for a quick and nutritious meal.


Ingredients

  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale, or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 medium cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, and chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. To prepare the dressing, whisk together raw honey, dijon mustard, lemon juice, and avocado oil in a bowl or blend with an immersion blender until smooth. Set aside or refrigerate for later use.
  2. Season the chicken with sea salt, black pepper, garlic powder, and onion powder. Grill the chicken on medium-high heat, brushing with avocado oil, for about 5 minutes per side or until it reaches an internal temperature of 165°F. Remove from heat and let rest.
  3. In a large serving bowl, layer the chopped greens with cherry tomatoes, red onion, cucumber, avocado, crumbled bacon, and sliced hard-boiled eggs. Thinly slice the grilled chicken and add it to the salad.
  4. Drizzle the honey dijon dressing over the salad and toss gently or serve it on the side.

Notes

Feel free to substitute the greens with your choice of salad mix.
For added flavor, marinate chicken in the dressing before grilling.
You can prepare the dressing a day in advance for ease.
