Ingredients

  • 1 cup rolled oats, plus more for topping
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon

  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil or avocado oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F and prepare a muffin tin with liners or grease.
  2. In a medium bowl, mix oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt until combined.
  3. In a large bowl, whisk eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil until smooth.
  4. Combine the dry ingredients with the wet ingredients, stirring gently; do not overmix.
  5. Spoon the batter into the muffin cups evenly, adding extra oats on top if desired.
  6. Bake for 18-20 minutes until a toothpick comes out clean from the center of a muffin.
  7. Cool in the tin for 5 minutes then transfer to a wire rack to cool completely.
