Instructions
- Preheat your oven to 350°F and prepare a muffin tin with liners or grease.
- In a medium bowl, mix oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt until combined.
- In a large bowl, whisk eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil until smooth.

- Spoon the batter into the muffin cups evenly, adding extra oats on top if desired.
- Bake for 18-20 minutes until a toothpick comes out clean from the center of a muffin.
