  • 1 pound lean ground beef
  • 1/3 cup diced shallot
  • 2 cloves garlic, grated or minced
  • 1 teaspoon Italian seasoning
  • 2 small zucchini, diced
  • 1 cup corn, frozen or fresh
  • 1/3 cup basil pesto
  • 1 tablespoon balsamic vinegar
  • Chopped basil for garnish

Instructions

  1. Heat a 12-inch skillet over medium-high heat and drizzle in olive oil.
  2. Add the ground beef to the skillet, crumble, and cook for 2-3 minutes.
  3. Include the shallots and garlic in the skillet, seasoning with salt, pepper, and Italian seasoning, and cook for another minute.
  4. Push the beef mixture to one side, add zucchini and corn to the other, and season with salt and pepper.
  5. Cook until the beef is browned, and the zucchini is tender. Stir in the pesto and balsamic vinegar, mixing well.
  6. Taste and adjust seasoning as needed, then top with chopped basil and serve immediately.

Notes

Feel free to substitute the zucchini with other vegetables like bell peppers or spinach.
Using fresh basil pesto elevates the flavor, but store-bought works well too.
