- 4 boneless skinless chicken breasts (about 6–8 oz each)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper to taste, optional
- Avocado oil or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard or sriracha for a spicy version
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- Lettuce leaves or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- Hot honey for drizzling
Instructions
- Make the garlic aioli by mixing mayonnaise, minced garlic, dijon mustard, and lemon juice in a small bowl until well combined. Cover and set aside.
- Prepare the chicken by drying it with paper towels and preheating the grill to medium-high heat. Combine garlic powder, paprika, salt, and optional black pepper in a small bowl. Rub chicken breasts with avocado oil and season both sides evenly.
- Grill the chicken for 4-7 minutes each side until the internal temperature reaches 165°F (74°C). Let rest before assembling the sandwiches.
- While the chicken is resting, slice the brioche buns and lightly toast them on the grill.
- Spread garlic aioli on the bottom half of each toasted bun. Place a grilled chicken breast on each bun.
- Layer avocado slices, tomato slices, lettuce leaves or arugula, and bacon on top of the chicken. Add dill pickles if desired.
- Drizzle hot honey over each sandwich.
- Top with the top bun and serve immediately.

Feel free to customize the toppings based on your preferences.
For an extra kick, add a bit of hot sauce to the garlic aioli.
