Description

These Grilled Chicken Sandwiches feature juicy chicken breasts, crispy bacon, and fresh avocados, all nestled in toasted brioche buns. It’s a simple yet flavorful dish that brings summer vibes to any meal, perfect for BBQs and gatherings!


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or sriracha for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • Hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing mayonnaise, minced garlic, dijon mustard, and lemon juice in a small bowl until well combined. Cover and set aside.
  2. Prepare the chicken by drying it with paper towels and preheating the grill to medium-high heat. Combine garlic powder, paprika, salt, and optional black pepper in a small bowl. Rub chicken breasts with avocado oil and season both sides evenly.
  3. Grill the chicken for 4-7 minutes each side until the internal temperature reaches 165°F (74°C). Let rest before assembling the sandwiches.
  4. While the chicken is resting, slice the brioche buns and lightly toast them on the grill.
  5. Spread garlic aioli on the bottom half of each toasted bun. Place a grilled chicken breast on each bun.
  6. Layer avocado slices, tomato slices, lettuce leaves or arugula, and bacon on top of the chicken. Add dill pickles if desired.
  7. Drizzle hot honey over each sandwich.
  8. Top with the top bun and serve immediately.

Notes

Feel free to customize the toppings based on your preferences.
For an extra kick, add a bit of hot sauce to the garlic aioli.
These sandwiches can be prepared with different types of bread for variety.
