Description

These Green Velvet Cupcakes are a tasty twist on a classic treat! With the perfect balance of sweetness from the cream cheese frosting and the unique green hue, they are ideal for festive occasions and easy to make from scratch.


Ingredients

  • 1 ¼ cup granulated sugar
  • ½ cup butter – unsalted
  • 3 eggs
  • 3 drops green food coloring – or more
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 cup buttermilk*
  • 2 teaspoon vanilla extract
  • 8 ounces cream cheese – softened
  • ½ cup unsalted butter – softened
  • 4 cups confectioner's sugar
  • 1 teaspoon vanilla extract
  • green sanding sugar or shamrock sprinkles

Instructions

  • Preheat your oven to 350° F and line muffin pans with 18 liners.
  • In a large bowl, cream together the sugar and unsalted butter until light and fluffy.
  • Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.
  • Stir in the green food coloring and vanilla extract for flavor and color.
  • In a separate bowl, whisk together the flour, salt, baking soda, and baking powder to combine all dry ingredients.
  • Pour the buttermilk into the wet mixture and stir to combine well.
  • Gradually incorporate the dry flour mixture into the wet ingredients, mixing until just combined.
  • Fill each lined muffin cup about ¾ full with the batter.
  • Place the muffin pan in the oven and bake for approximately 17 minutes, using a toothpick to check for doneness.

Notes

For a richer green color, add more green food coloring as desired.
Allow cupcakes to cool completely before frosting with cream cheese icing.
Top with green sanding sugar or shamrock sprinkles for an extra festive touch.
