Ingredients

  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 small shallot, diced fine
  • 4 garlic cloves
  • 1 tablespoon dijon mustard
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 pounds bone-in skin-on chicken thighs

Instructions

  1. In a large bowl, mix olive oil, lemon juice, lemon zest, shallot, garlic, dijon mustard, oregano, salt, thyme, paprika, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade and toss well to ensure they are fully coated. Cover and refrigerate for at least 30 minutes or up to 24 hours for deeper flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Transfer the marinated chicken thighs to a baking dish. Pour any remaining marinade over the top.
  5. Cover the baking dish with foil and bake for 45 to 55 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) when tested with a thermometer.
  6. Remove the foil and switch the oven to broil. Broil the chicken for 2 to 3 minutes to crisp the skin, watching closely to prevent burning.

Notes

For extra flavor, marinate the chicken overnight.
Serve with a side of Greek salad or roasted vegetables for a complete meal.
Leftover chicken can be stored in the fridge for up to 3 days.
