Description

This Greek Chicken Marinade is packed with irresistible flavor, combining fresh lemon, garlic, and herbs. It’s simple to prepare and perfect for a quick, healthy meal or grilling outdoors.


Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 lemons juiced (about 1/4 cup)
  • 1 lemon zested
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dijon mustard optional, for emulsification
  • 1 tablespoon fresh parsley or dill chopped, optional for garnish
  • 2 pounds chicken breasts, thighs, drumsticks, or chunks

Instructions

  • Zest one lemon into a medium bowl, then juice both lemons to get about 1/4 cup of juice. Mince the garlic cloves.
  • Whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and Dijon mustard (if using) in the bowl.
  • Place chicken in a large resealable plastic bag or shallow dish. Pour marinade over chicken to ensure all pieces are coated. Seal the bag or cover the dish.
  • Refrigerate for at least 1 hour, or up to 24 hours for maximum flavor. Marinate for 4 to 6 hours for best results.
  • Remove chicken from fridge 20 minutes before cooking to bring to room temperature.
  • Remove chicken from marinade and cook as preferred: grill, bake, or pan-sear until the internal temperature reaches 165°F.
  • Let cooked chicken rest for 5 minutes before serving and garnish with fresh parsley or dill if desired.

Notes

Marinating for longer enhances the flavor, but even 1 hour will suffice.
Bring the chicken to room temperature before cooking for more even cooking results.
