These Graduation Cap & Diploma Sugar Cookies are a delightful treat, featuring white chocolate and a fun decorating process. Perfect for parties and celebrations, these cookies are easy to make and irresistibly delicious!

- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the flour, salt, and baking powder; set aside.
- Cream together the butter and sugar until fluffy.
- Add the egg, vanilla, and almond extract to the butter mixture; stir well.
- Gradually incorporate the dry ingredient mixture until just combined.
- If the dough is sticky, add a bit more flour as needed.
- Roll out the cookie dough on a floured surface to about 1/8 inch thick.
- Cut out twelve 3-inch circles from the dough.
- Cut out twelve diamond shapes to make the grad caps, and cut a triangle notch from each circle.
- Brush two edges of the diamond and insert it into the notch of the circle; press seams together gently.
- Bake cookies for 10-14 minutes until the edges are set and tops no longer look wet.
- Allow the cookies to cool completely before decorating.
- Reserve about 2 tablespoons of white modeling chocolate to color for the tassels.
- Color about 2/3 of the modeling chocolate with flesh tone food coloring; color the rest for grad caps.
- Let the colored chocolate rest at room temperature for 30 minutes.
- Roll out the flesh tone chocolate to 1/16 inch thick and cut out twelve 3-inch circles.
- Roll out the colored chocolate to the same thickness and cut out twelve diamond-shaped grad caps.
- On each cookie, brush a light coating of corn syrup, then layer the circle and diamond shapes, pressing to seal.
- Create modeling chocolate strands for the tassels using the extruder. Attach as directed for decoration.

Ensure to cool the cookies completely before decorating for the best results.
