Ingredients

  • 1 cup garlic scapes, chopped
  • ½ cup fresh basil
  • ⅓ cup parmesan cheese, grated
  • ⅓ cup walnuts or pine nuts, toasted
  • ½ cup olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Rinse the garlic scapes under cold water, pat dry, trim tough ends, and chop into 1-2 inch pieces.
  2. Toast walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring until golden.
  3. Allow nuts to cool slightly after toasting.
  4. Blend chopped garlic scapes, fresh basil, toasted nuts, and parmesan cheese in a food processor until finely chopped.
  5. While blending, slowly drizzle in olive oil until desired smoothness is reached.
  6. Mix in lemon juice, salt, and black pepper, blending again to combine flavors.
  7. Adjust seasoning if necessary, adding more salt, lemon juice, or olive oil as needed.
  8. If too thick, blend in 1-2 tablespoons olive oil or water until smooth and spreadable.
  9. Use immediately or store in an airtight container, covering the top with olive oil to maintain freshness.

Notes

Fresh garlic scapes are best in spring and summer, making this recipe seasonal.
This pesto can also be frozen for later use—just ensure it’s airtight.
