Instructions
- Rinse the garlic scapes under cold water, pat dry, trim tough ends, and chop into 1-2 inch pieces.
- Toast walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring until golden.
- Allow nuts to cool slightly after toasting.
- Blend chopped garlic scapes, fresh basil, toasted nuts, and parmesan cheese in a food processor until finely chopped.
- While blending, slowly drizzle in olive oil until desired smoothness is reached.
- Mix in lemon juice, salt, and black pepper, blending again to combine flavors.
- Adjust seasoning if necessary, adding more salt, lemon juice, or olive oil as needed.
- If too thick, blend in 1-2 tablespoons olive oil or water until smooth and spreadable.
- Use immediately or store in an airtight container, covering the top with olive oil to maintain freshness.
