- 4 large carrots

- 1/4 teaspoon black pepper
- 1/4 cup chopped pistachios
- 2 tablespoons fresh dill
- 2 tablespoons fresh parsley
- 2 green onions, sliced
Instructions
- Wash and peel the carrots. Use a vegetable peeler to shave each carrot lengthwise into long, thin ribbons and place them in a large bowl.
- In a small bowl or jar, combine olive oil, fresh lemon juice, apple cider or champagne vinegar, honey, Dijon mustard, and grated garlic. Season with kosher salt and black pepper, then whisk until the mixture is smooth and emulsified.
- Pour the prepared dressing over the carrot ribbons and toss gently to coat them thoroughly.
- Add the chopped pistachios, dill, parsley, and green onion to the bowl. Toss again to evenly distribute all ingredients.
- Transfer the salad to a serving platter. Garnish with extra herbs and chopped pistachios. You can serve immediately or chill for 15–30 minutes to enhance the flavors.
Notes
For a spicier kick, add a pinch of red pepper flakes to the dressing.
This salad can be made a few hours ahead; just add the nuts right before serving to maintain their crunch.
