Description

This Elegant Graduation Cake with Fondant Cap Topper is a delightful blend of flavors, featuring yellow, chocolate, and cotton candy cakes adorned with silky buttercream and charming decorations, making it perfect for graduation celebrations.


Ingredients

Scale
  • 2 yellow sheet cake
  • 2 chocolate sheet cake
  • 1 cotton candy cake
  • 10 cups American buttercream frosting (tinted yellow with gel food coloring)
  • 4 cups marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch rice krispie treats (can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes (9×13 dimensions), 2 chocolate sheet cakes (9×13 dimensions), and 1 cotton candy dome cake (5 inch diameter). Reserve any leftover cotton candy batter for cupcakes.
  2. Allow cakes to cool completely.
  3. Prepare the yellow buttercream frosting while the cakes cool.
  4. To create the cap cake, place the dome cake on a cake board the same size. Frost it smoothly with buttercream and chill for 20 minutes.
  5. Roll out black fondant and drape it over the chilled dome cake, smoothing it out. Remove excess fondant with a pizza cutter. Insert a bubble tea straw in the center and set aside.
  6. For the cap's top, cut a square of cardboard and color the edges with a black edible marker. Apply icing and layer black fondant on top, removing excess with a cutter.
  7. Cut a small circular piece from fondant, brush corn syrup on the cardboard, fold a ribbon, and press the circle piece on top to secure everything.
  8. Attach the cardboard piece to the dome cake with melted chocolate or royal icing, then steam to eliminate powdered sugar residue.
  9. To make the edible diploma, roll rice krispie treats into a cylinder and cover the sides with buttercream.
  10. Wrap the rice krispie log in white fondant and trim the excess. Use a cookie cutter to make 2 circles of white fondant and attach them with buttercream icing. Finish by wrapping a red ribbon around the diploma.
  11. Assemble the cake by placing the 2 chocolate sheet cakes side by side on a large board, then place the yellow sheet cakes on top, spreading icing in between.
  12. Use a piping bag with yellow icing and large star tip (Wilton tip 1M) to pipe roses on the sides and top of the cake.
  13. Decide where to place the diploma and cap on the cake, reinforcing with dowels or bubble tea straws. Position the decorations accordingly.
  14. Cut out letters for 'Congratulations Class of 2024' with cookie cutters and secure them on the board with buttercream.

Notes

Make sure to cool cakes completely before frosting for the best results.
Feel free to customize cake colors according to school themes or personal preferences.
Using a piping bag helps achieve a professional-looking finish for the roses.
