Description

This Easy Zucchini Cake With Cream Cheese Frosting is deliciously moist and bursting with flavor. Made with fresh zucchini and topped with creamy frosting, it’s the perfect homemade treat for any occasion.


Ingredients

  • 2 medium zucchini (1416 oz)
  • 3/4 cup vegetable or avocado oil
  • 3 eggs
  • 1 cup white granulated sugar
  • 1 cup light brown sugar
  • 2 tsp vanilla extract
  • zest of 1 orange
  • 2 1/4 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cardamom
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • pinch of salt

Instructions

  1. Take out the eggs, cream cheese, and butter to bring them to room temperature before starting.
  2. Preheat your oven to 350℉ and grease a 9×13 aluminum baking pan for even cooking.
  3. Combine the warm eggs, oils, sugars, and vanilla in a mixing bowl until well blended.
  4. In a separate bowl, mix the dry ingredients including flour, baking powder, baking soda, spices, and salt.
  5. Gradually incorporate the dry mixture into the wet ingredients while folding in the zucchini and orange zest.
  6. Pour the batter into the prepared baking pan and place it in the oven to bake for the time required until golden brown.
  7. While baking, prepare the cream cheese frosting by beating softened cream cheese and butter until smooth, then add vanilla, powdered sugar, cinnamon, cardamom, and a pinch of salt until creamy.
  8. Once the cake is cool, spread the frosting evenly on top and serve.
