Description

Ingredients

  • 1 whole chicken – 4-5 lb
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • lbs baby potatoes
  • 3 carrots
  • 1 tbsp olive oil – for vegetables
  • Salt and pepper – to taste (for vegetables)

Instructions

  1. Remove the whole chicken from the fridge and let it sit at room temperature for 20-30 minutes.
  2. Dry the chicken thoroughly with paper towels. Mix 2 tbsp olive oil, 2 tsp dried thyme, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp paprika, 1 tsp salt, and 1 tsp black pepper in a small bowl. Rub this mixture evenly over the chicken.
  3. Optionally, stuff the cavity with fresh herbs for added flavor.
  4. Preheat your oven to 450°F.
  5. In a large bowl, toss 1½ lbs baby potatoes and 3 carrots with 1 tbsp olive oil, about 1 tsp salt, and about 1 tsp black pepper. Arrange them in a roasting pan.
  6. Place the seasoned chicken on top of the vegetables. If using a thermometer, insert it into the thickest part of the thigh without touching the bone.
  7. Roast in the preheated oven for 30 minutes.
  8. Reduce the oven temperature to 375°F and continue roasting for an additional 50-70 minutes, or until the internal temperature reaches 165°F in the thigh. If it’s not yet done, continue cooking until it reaches the right temperature.
  9. Take the chicken out of the oven and let it rest for 10-15 minutes before carving.

Notes

Using room temperature chicken ensures even cooking.
Don’t rush the resting period; it helps the juices redistribute for better flavor.
Consider using a meat thermometer to check for doneness.
