Description

This Easy Peach Cobbler is a delicious, gluten-free dessert featuring fresh peaches, a hint of cinnamon, and a naturally sweetened almond flour topping. Perfect for a quick treat, it combines delightful flavors and simple preparation for a comforting finish to any meal.


Ingredients

  • 8 medium-large peaches, peeled, pitted and sliced (about 56 cups)
  • 1 tablespoon fresh lemon juice
  • 24 tablespoons maple sugar or coconut sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon arrowroot flour or tapioca flour
  • pinch sea salt
  • 1 1/2 cups blanched almond flour
  • 1/2 cup arrowroot flour or tapioca flour
  • 1/3 cup + 1 tablespoon maple sugar or coconut sugar
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons aluminum-free baking powder
  • 1/3 cup + 2 tablespoons refined coconut oil, melted and cooled to almost room temp
  • 1/3 cup unsweetened almond milk or preferred dairy-free milk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9" square or round or 11" oval baking dish with coconut oil.
  2. Toss the peaches with lemon juice, maple sugar, cinnamon, arrowroot flour, and sea salt until well coated. Spread the mixture evenly in the prepared baking dish.
  3. In a large bowl, combine the cobbler topping ingredients until a smooth batter forms. Let the batter rest for 5 minutes to thicken.
  4. Drop the batter over the peach mixture in four parts using a scoop or spoon, gently flattening each portion without completely covering the peaches.
  5. Bake for about 40 minutes, or until the filling is bubbly and the pastry top is browned and set.
  6. Allow the cobbler to cool for 20-30 minutes to let the filling set. Serve warm or at room temperature, optionally with coconut vanilla ice cream or whipped cream.

Notes

Adjust the sweetness of the peach filling according to your preference by adding more or less maple sugar or coconut sugar.
For a different flavor, you can add a splash of almond extract to the topping mixture.
Let the cobbler sit after baking to ensure the filling thickens properly.
