Description

This Easy English Trifle is a delightful dessert featuring layers of raspberry jelly, fresh raspberries, sponge cake, and rich custard. Ingredients

  • 135g / 2 cups raspberry jelly
  • 125g / 1 cup fresh raspberries
  • 500g / 17 oz raspberry or strawberry cream sponge roll
  • 1½ uk pints / 3½ us cups whole milk
  • 1/2 uk pint / 1/2 us cup double cream/heavy whipping cream
  • 6 tbsp bird's custard powder
  • 6 tbsp white sugar
  • 2 tsp vanilla
  • 400ml /1½ cups double/whipping cream
  • 4 tbsp icing (powdered) sugar
  • 1 tsp vanilla
  • 4 tbsp pomegranate seeds
  • 2 tbsp pistachios

Instructions

  1. Prepare the jelly according to the package directions and pour it into a trifle bowl. Allow it to cool for 20 minutes before refrigerating for 1½ hours. Once thickened, add the raspberries and chill until fully set for 4-5 hours.
  2. Make the custard as per package instructions, stirring continuously over low heat to prevent lumps. If lumps form, blend until smooth. Cover with plastic wrap directly on the surface and let cool for 15 minutes.
  3. Slice the sponge roll and arrange pieces along the sides and bottom of the trifle bowl. Soak the bottom pieces with raspberry liqueur while leaving the sides dry.
  4. Pour the custard over the sponge until it reaches the top. Allow it to come to room temperature and then refrigerate for a couple of hours to chill.
  5. Whip the heavy cream with icing sugar until fluffy, then spoon it over the chilled custard. Decorate with pomegranate seeds, pistachios, or fresh raspberries.

Notes

Make sure the jelly is well set before adding the raspberries.
You can substitute regular cream with plant-based options to suit dietary preferences.
Customize toppings to your liking with other fruits or nuts.
