  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion
  • 3 tablespoons champagne vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Cut the cucumber in half lengthwise and remove the seeds, then slice it into thick half-moons and place in a large bowl.
  2. Sprinkle the cut cucumbers with 1/2 teaspoon of kosher salt and let them sit for about 5 minutes to release moisture. Discard any excess cucumber water.
  3. Slice the tomatoes into thick wedges and add them to the bowl along with the red onion slices.
  4. In a separate small bowl, mix together the vinegar, olive oil, honey, remaining kosher salt, and black pepper.
  5. Pour the dressing over the salad and gently toss to combine everything.
  6. Add the chopped dill on top and toss again lightly before serving.
  7. Serve the salad chilled or at room temperature.

Notes
