- 3 tablespoons butter
- ½ tablespoon flour
- 2 cloves garlic, minced
- 2 cups corn, fresh or frozen
- 2/3 cup heavy cream
- 1 tablespoon lemon juice
- ½ cup parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup fresh basil
Instructions
- Boil a large pot of salted water over medium-high heat. Cook the pasta until al dente, about 8-10 minutes, then reserve ½ cup pasta water, drain, and set aside.
- Melt butter in a large skillet over medium heat until sizzling. Whisk in flour and cook for 1 minute.
- Add minced garlic and corn, cooking for about 2 minutes until fragrant and softened.
- Stir in heavy cream, lemon juice, and reserved pasta water. Cook over medium heat until smooth and slightly thickened, about 1 minute. Incorporate Parmesan until melted, adding more pasta water for desired consistency.
- Season with salt and pepper. Toss in drained pasta and fresh basil until well coated.
- Serve immediately, garnished with extra Parmesan and fresh basil, if desired.
Notes
Feel free to substitute pecorino cheese for Parmesan based on your preference.
For extra flavor, consider adding cooked chicken or shrimp to the pasta before serving.
