Description

This Easy Cowboy Caviar is a delightful blend of black beans, chunky vegetables, and a tangy dressing. Ready in just a few hours, it serves as a refreshing dip or a topping for tacos, making it ideal for gatherings or a quick, healthy meal.


Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced and added just before serving, optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo, plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, red and yellow bell peppers, corn, red onion, cilantro, and tomatoes.
  2. In a blender, combine red wine vinegar, honey, lime juice, sea salt, chipotles, and the sauce. Blend until smooth. With the blender on low speed, gradually add the oil until the dressing is thickened and emulsified. Stir in oregano and black pepper, adjusting seasonings to taste.
  3. Pour half of the dressing over the mixed beans and vegetables, stirring to combine. Cover and refrigerate for at least 3 hours before serving.
  4. Before serving, stir the cowboy caviar and add more dressing if desired. If using fresh avocado, add it just before serving. Leftover dressing can be stored in the refrigerator for a few days and works great as a marinade.
  5. Serve with tortilla chips or as a tasty topping for tacos.

Notes

For added flavor, let the cowboy caviar marinate overnight before serving.
Adjust the level of spiciness by increasing or decreasing the number of jalapeños used.
Feel free to add your favorite ingredients like corn, bell peppers, or different types of beans.
