- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Fold in rainbow sprinkles, being careful not to over-mix. The dough will be sticky.
- Allow the dough to rest uncovered for about 5 minutes to thicken.
- Use a medium cookie scoop to portion out the dough into balls.
- Roll each cookie ball in additional sprinkles, pressing gently to adhere them.
- Place the dough balls on the prepared baking sheet, spaced about 3 inches apart. Bake for 10-12 minutes until the edges are set but the center is slightly undercooked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a chewier cookie, do not overbake; slightly underdone centers provide a perfect texture.
Use a variety of sprinkles for a fun look, perhaps mixing in chocolate chips too.
