Description

Easy Confetti Cookies are a delightful treat combining white cake mix with colorful sprinkles. Perfect for any gathering or a sweet snack, these cookies are quick to prepare and offer irresistible flavors that everyone will enjoy!


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
  3. Fold in rainbow sprinkles, being careful not to over-mix. The dough will be sticky.
  4. Allow the dough to rest uncovered for about 5 minutes to thicken.
  5. Use a medium cookie scoop to portion out the dough into balls.
  6. Roll each cookie ball in additional sprinkles, pressing gently to adhere them.
  7. Place the dough balls on the prepared baking sheet, spaced about 3 inches apart. Bake for 10-12 minutes until the edges are set but the center is slightly undercooked.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a chewier cookie, do not overbake; slightly underdone centers provide a perfect texture.
Use a variety of sprinkles for a fun look, perhaps mixing in chocolate chips too.
