  • 4 boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup (62.5 g) all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 2 teaspoons garlic, minced
  • 2 tablespoons (62.5 g) all-purpose flour
  • 2 cups (16 ounces) chicken broth
  • ½ cup (119 g) heavy cream, or milk
  • ½ teaspoon Worcestershire sauce
  • Fresh parsley, chopped, for garnish

Instructions

  1. If needed, pound the chicken breasts to about ½ to ¾ inch thickness for even cooking, or slice large breasts in half horizontally.
  2. Season both sides of the chicken with kosher salt, black pepper, paprika, garlic powder, and onion powder.
  3. In a shallow bowl, place the flour and lightly dredge the chicken, shaking off any excess flour.
  4. In a large skillet over medium heat, heat the olive oil. Add the chicken and cook for 4 to 5 minutes on each side until golden brown. The chicken doesn’t need to be fully cooked at this point and should be transferred to a plate afterward.

Notes

Pound the chicken breasts for more uniform cooking and better texture.
Use fresh herbs for garnishing to elevate the dish’s flavor.
You can substitute heavy cream with milk for a lighter option.
