Description

These Easy Caramel Apple Empanadas are a delightful blend of sweet apple pie filling and creamy cheesecake, wrapped in a flaky crust. Perfect for satisfying cravings with minimal effort!


Ingredients

  • 2 boxes refrigerated pie crust 14.1 ounce each
  • 1 can apple pie filling 20 ounce
  • 1 package cream cheese, softened 8 ounce
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg separated
  • 2 ½ cups powdered sugar
  • ¼ cup caramel ice cream topping
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425 degrees F. Allow pie crusts to reach room temperature.
  2. Separate the egg white from the yolk, whisking each in small bowls. Set aside.
  3. Pour the apple pie filling into a small bowl and chop the apple slices into small bits. Set aside.
  4. In a mixing bowl, combine cream cheese with granulated sugar and vanilla extract, beating until smooth and creamy.
  5. Unroll the pie crusts and cut 4-inch circles using a biscuit cutter. Re-roll scraps as needed to create more circles.
  6. Spoon half a scoop of apple pie filling and half a scoop of cheesecake filling onto the centers of each pie crust circle. Brush the edges with the whisked egg white.
  7. Fold each empanada in half and pinch the edges to seal. Place on a parchment-lined baking sheet and repeat with remaining crust.
  8. Prick each empanada with a fork and brush the tops with the whisked egg yolk evenly.
  9. Bake for about 15 minutes or until golden brown. Remove from the oven and let cool on a wire rack.
  10. To prepare the glaze, whisk powdered sugar with caramel ice cream topping and milk to desired consistency.
  11. Dip cooled empanadas into the caramel glaze and return to the parchment-lined baking sheet to set.

Notes

For a richer flavor, use a flavored pie filling or add spices like cinnamon or nutmeg.
Ensure the edges of the empanadas are well-sealed to prevent filling from leaking during baking.
