- 2 packages (5.3 oz each) Boursin cheese
- 1.5 cups chopped de-seeded tomatoes (vine-ripened or roma)
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or finely minced
- salt to taste
- pepper to taste
- balsamic reduction (Alessi brand recommended)
- crackers or crostini
Instructions
- Allow the Boursin cheese to soften at room temperature for 15-20 minutes.
- In a mixing bowl, combine chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Let it sit for 5 minutes to allow the flavors to meld.
- Spread the softened Boursin cheese evenly in an 8-9" shallow serving dish or pie pan.
- Top the Boursin cheese with the bruschetta mixture, leaving the juices in the mixing bowl.
- Drizzle balsamic reduction over the dip and garnish with additional basil. Serve with crackers or crostini.
Notes
Use fresh basil for the best flavor. Add more to taste if desired.
Allowing the Boursin to soften makes it easier to spread and enhances its creamy texture.
