Description

This Easy Blackberry Pie boasts a deliciously sweet and tangy flavor, complemented by a flaky, buttery crust. It’s a perfect dessert for gatherings or a cozy night in, showcasing fresh blackberries in a homemade pie that anyone can create with simple steps.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse to mix.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Mix in cold water and pulse until moist clumps appear.
  4. Transfer dough to parchment paper, divide, and form into balls, then flatten into discs. Do not knead.
  5. Wrap discs in plastic wrap and refrigerate for 1 hour.
  6. Preheat oven to 400 degrees when ready to use crust.
  7. In a saucepan over medium heat, mix water, lemon juice, vanilla, and blackberries to create the filling.
  8. Gently stir in sugar and cornstarch, cooking until thickened. Set aside.
  9. Sprinkle flour on a surface and roll out the bottom pie crust to a 12" circle, transferring it to a 9" pie plate.
  10. Spread the blackberry mixture evenly on the crust without getting filling on the edges.
  11. Roll out the remaining crust and place it on top, trimming the edges neatly.
  12. Pinch or fork the edges to seal the pie.
  13. Whisk egg and water together, then brush over the top crust.
  14. Optional: Sprinkle top with sugar.
  15. Cut slits in the top for steam to escape.
  16. Bake for 15 minutes, then reduce to 350 degrees for 45-50 minutes until bubbly and golden.
  17. Check at 30 minutes; cover if necessary to prevent over-browning.
  18. Cool at room temperature before slicing and serving.

Notes

Make sure your butter is cold to achieve a flaky crust.
You can substitute other berries if desired, such as blueberries or raspberries.
Letting the pie cool completely before slicing helps maintain its shape.
