- 1 medium red onion chopped small
- 4 cloves garlic minced
- 2 jalapeño peppers seeded and chopped
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro plus more for serving

Instructions
- Warm the olive oil in a small pan over medium heat.
- Add the chopped red onion, garlic, and jalapeño peppers and sauté for 5-8 minutes, stirring frequently, then remove from heat.
- In a food processor, add the drained and rinsed black beans, cooked onion mixture, cumin, salt, lime juice, and cilantro. Process until smooth, leaving some texture if desired.
- Transfer the dip to a serving dish, garnish with additional cilantro, vegan cheese, and pickled red onions if you like. Serve with tortilla chips.
Notes
Feel free to adjust the spice level by adding or reducing the jalapeños.
You can customize the dip by adding other ingredients like corn or diced tomatoes for added flavor.
