- 10 dates (soaked in hot water for 10 minutes to soften)
- 1/2 cup almond flour
- 4 tbsp chocolate protein powder
- 2 tbsp cocoa powder
- 2 1/2 tbsp maple syrup
- 1 tsp vanilla
- 1/8 teaspoon salt
- 1 cup cottage cheese
- 1/2 cup vanilla protein powder
- 1 1/4 cups almond flour
- 2 1/2 tbsp maple syrup
- 2 tbsp cashew butter
- 1 1/2 tsp vanilla
- 1/3 cup mini chocolate chips
Instructions
- Soak the dates in hot water for 10 minutes, then drain.
- In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to form the brownie base.
- In a bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth. Gently fold in mini chocolate chips.
- Line an 8×8 inch dish with parchment paper. Spread the date-chocolate mixture evenly in the dish, then top with the cottage cheese mixture, spreading to cover completely.
- Freeze for at least 1 hour until firm, then cut into squares and serve.
Notes
For a fudgier texture, ensure dates are blended well into the mixture.
