Description

These Decadent Cottage Cheese Date Brownies combine rich flavors of chocolate, dates, and cottage cheese for a scrumptious treat. Perfect for a quick dessert or healthy snack, they offer irresistible taste and simple preparation. Enjoy homemade goodness in every bite!


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips

Instructions

  • Soak the dates in hot water for 10 minutes, then drain.
  • In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to form the brownie base.
  • In a bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth. Gently fold in mini chocolate chips.
  • Line an 8×8 inch dish with parchment paper. Spread the date-chocolate mixture evenly in the dish, then top with the cottage cheese mixture, spreading to cover completely.
  • Freeze for at least 1 hour until firm, then cut into squares and serve.

Notes

For a fudgier texture, ensure dates are blended well into the mixture.
Use parchment paper for easy removal from the baking dish.
Store any leftovers in the freezer for a quick treat.
