  • 4 cabbage steaks
  • 1/3 cup olive oil
  • 1 1/2 tsp. minced garlic
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. smoked paprika
  • 1 1/2 cups grated parmigiano reggiano cheese
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. chopped parsley

Instructions

  • Preheat your oven to 425°F and prepare a baking sheet lined with parchment paper.
  • Wash and halve the cabbage vertically, then cut 'steaks' about 1 inch thick from one half, ensuring they remain intact at the stem.
  • In a bowl, mix olive oil, 1/3 cup of grated Parmesan, garlic, salt, pepper, and smoked paprika. Brush this mixture on both sides of the cabbage steaks.
  • Place remaining Parmesan on the baking sheet, creating piles for each steak (about 1/3 cup per steak). Set each cabbage steak on top of its cheese bed.
  • Roast in the oven for 20-25 minutes, until the cheese is crispy and golden brown.
  • Just before serving, drizzle the steaks with balsamic vinegar and sprinkle fresh parsley on top. Serve immediately.

Notes

For extra flavor, consider adding herbs like thyme or rosemary to the cheese mixture.
