- 2 (8 oz) chicken breasts
- salt and pepper to taste
- 1/2 cup gluten-free flour blend
- 1–1/2 cups gluten-free panko-style breadcrumbs
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 2 large eggs
- 1/3 cup extra virgin olive oil
- 1/3 cup high-heat cooking oil, like canola or avocado
Instructions
- Pat the chicken breasts dry with paper towels and slice them into strips about 3/4 – 1 inch wide, yielding 4 slices per breast.
- Place each strip cut side up on a cutting board and cover with plastic wrap.
- Gently pound the strip with a meat mallet until it is as thin as possible without tearing.
- Transfer the flattened chicken to a large platter or a half sheet pan and repeat for the remaining strips.
- Season both sides of the chicken cutlets lightly with salt and pepper and refrigerate while preparing the breading station.
Notes
Use Kikkomen brand gluten-free panko for the best results.
Make sure to pound the chicken evenly for consistent cooking.
