- 1 pint cherry tomatoes halved
- 8 ounces cream cheese very soft
- 4 garlic cloves minced
- ½ teaspoon salt plus more to season the chicken
- ¼ teaspoon pepper plus more to season chicken
- 2 tablespoons fresh basil chopped
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat the oven to 425°F.
- Arrange the chicken breasts in a single layer in a large baking dish, seasoning them generously with salt, pepper, and Italian seasoning.
- In a medium bowl, mix together the cream cheese, olive oil, garlic, salt, pepper, and fresh basil.
- Stir in the halved cherry tomatoes and fold them gently into the cream cheese mixture.
- Spread the mixture evenly over the chicken breasts, ensuring they are well covered.
- Bake for 30-40 minutes, or until the chicken is cooked through and no longer pink in the center.
