Description

This Cottage Cheese Mac and Cheese is a delightful twist on a classic dish, featuring rich flavors from cottage cheese and sharp cheddar. Perfect for a quick and satisfying dinner, it combines creamy textures with simple ingredients for a comforting family meal.


Ingredients

  • 8 ounces elbow macaroni
  • 1½ cups cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ½ cup milk
  • ¼ cup shredded parmesan cheese
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon dry mustard powder

Instructions

  1. Cook the macaroni in salted boiling water as per package instructions. Retain ½ cup of pasta water, drain the pasta, and set aside.
  2. Combine cottage cheese, cheddar cheese, sour cream, milk, Parmesan cheese, cornstarch, salt, onion powder, and dry mustard in a blender. Blend until smooth.
  3. Pour the blended mixture into a large saucepan over medium-low heat, stirring often until the sauce becomes smooth and creamy, which should take about 6 to 8 minutes.
  4. Add the cooked pasta to the sauce and mix well to coat. Cook for an additional 1 to 2 minutes until heated through.
  5. Allow to rest for a few minutes to thicken slightly, adding reserved pasta water to adjust the consistency if necessary.

Notes

For a richer flavor, use full-fat cottage cheese.
Feel free to top with additional cheddar before serving for extra cheesiness.
