Description

This Comforting Zuppa Toscana is a delightful blend of flavors, featuring crispy bacon, spicy sausage, and hearty vegetables. It’s a simple, wholesome meal that’s perfect for a cozy dinner or a gathering with loved ones.


Ingredients

  • 4 slices thick-cut bacon, diced
  • 1 pound hot Italian sausage
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 6 cups chicken broth
  • 4 Yukon gold potatoes, cut into 1 inch pieces
  • 4 cups kale, chopped, large stems removed
  • 1 cup heavy cream

Instructions

  1. In a large stock pot over medium heat, cook the bacon until it is crisp. Remove from the pot with a slotted spoon and transfer to a paper towel-lined plate. Drain off the excess grease, but there is no need to clean the pot.
  2. Return the pot to medium heat and add the Italian sausage, breaking it up while browning for about 3 to 5 minutes until no longer pink.
  3. Add in the onions, garlic, salt, pepper, and crushed red pepper flakes, cooking for 3 minutes.
  4. Pour in the chicken broth and bring to a roaring boil. Add the potatoes and reduce heat to simmer, cooking until the potatoes are fork-tender, about 15 minutes.
  5. Stir in the kale and allow it to wilt for about 2 minutes. Then add the heavy cream.
  6. Return the bacon to the pot and adjust salt and pepper to taste.

Notes

For a lighter version, substitute heavy cream with half-and-half or evaporated milk.
Feel free to add other vegetables like carrots or celery for additional flavor and nutrition.
This soup freezes well; portion it into containers for easy reheating later.
