Description

Circus Animal Cookie Rice Krispie Treats are a fun twist on the classic snack! With their irresistible flavor and colorful appearance, these treats combine marshmallows, rice krispies, and circus cookies for a delightful dessert. They’re perfect for celebrations or a sweet indulgence any time!


Ingredients

  • 9 ounces circus animal cookies
  • 10 ounces mini marshmallows
  • 6 cups rice krispies cereal
  • 4 tablespoons unsalted butter
  • 3 tablespoons multi-colored nonpareils
  • 3 tablespoons colored sprinkles
  • 1/2 cup white chocolate chips
  • 12 drops red food coloring
  • 1/2 teaspoon heavy cream (optional)

Instructions

  • Grease a 9×13-inch baking dish with cooking spray.
  • Pulse the circus animal cookies in a food processor until a mix of crumbs and small pieces is achieved. Reserve 1/2 cup for topping.
  • In a large pot, melt the butter and mini marshmallows over low heat, stirring constantly until the mixture is smooth.
  • Remove from heat and fold in the rice krispies cereal, cookie crumbles, and 2 tablespoons each of nonpareils and colored sprinkles.
  • Gently press the mixture into the prepared baking pan using a greased silicone spatula.
  • Top with the reserved cookie pieces.
  • Melt the white chocolate chips in two separate bowls in the microwave for 30 seconds each.
  • Drizzle the plain white chocolate over the treats using a sandwich bag with the corner cut off.
  • Add red food coloring to the second bowl to create pink chocolate, then drizzle it in the opposite direction over the treats.
  • Sprinkle the remaining nonpareils and colored sprinkles on top and let cool until set.

Notes

For a fun variation, you can substitute with different types of cookies or chocolates.
Let the treats cool completely before cutting for the best shape and presentation.
These treats are best enjoyed fresh but can be stored in an airtight container for a few days.
