- 5 tbsp butter, melted
- 1 tsp vanilla
- 1 cup milk
- 3/4 cup chocolate chips
- 1 cup zucchini, shredded
Instructions
- Preheat your oven to 375 degrees F and prepare a 12-cup muffin pan with liners.
- In a large bowl, combine the flour, cocoa powder, both sugars, baking powder, and baking soda; whisk together well.
- Incorporate the egg, melted butter, and vanilla, mixing until combined. Gradually add in the milk and stir.
- Gently fold in the chocolate chips and shredded zucchini until evenly mixed.
- Pour the batter into the prepared muffin liners, filling them evenly. Optionally, sprinkle more chocolate chips on top.
- Bake for approximately 20 minutes or until a toothpick inserted comes out clean.
Notes
Allow muffins to cool before removing from the pan for best results.
These muffins can be stored in an airtight container for up to 3 days at room temperature.
