Description

These chocolate banana muffins are a delightful treat, boasting a rich chocolate flavor blended with ripe bananas. Simple to prepare and baked to perfection, these muffins make for a quick breakfast or a satisfying snack that will please anyone seeking homemade goodness.


Ingredients

  • 1 2/3 cups (161g) oat flour
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 large egg + 1 egg yolk
  • 3/4 cup plain oat milk
  • 3/4 cup tightly-packed mashed ripe bananas
  • 1/3 cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup mini semisweet chocolate chips

Instructions

  1. Line a 12-cup muffin pan with liners or lightly grease.
  2. Add oat flour, cocoa powder, baking soda, and salt to a blender. Blend briefly until combined.
  3. Add egg, egg yolk, oat milk, mashed bananas, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth, scraping down the sides as needed.
  4. Divide the batter evenly among the prepared muffin cups.
  5. Sprinkle mini semisweet chocolate chips over the tops of the muffins.
  6. Bake for 15–18 minutes, until a toothpick comes out mostly clean from the center.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool further. Serve and enjoy!

Notes

Experiment with different chocolate chips or nuts for added texture.
Ensure that bananas are very ripe for the best flavor and sweetness.
