Description

This Chicken Ranch Pasta Salad combines flavors of tender rotisserie chicken, crispy bacon, and fresh veggies for a delightful meal that’s easy to prepare and perfect for any occasion. It’s great for a quick dinner or a satisfying lunch!


Ingredients

  • 3 cups uncooked fusilli or rotini pasta
  • 5 strips bacon cut into small pieces
  • 1/2 medium red onion chopped
  • 2 cups shredded cooked/rotisserie chicken
  • 2 cups grape or cherry tomatoes cut into halves
  • 1/2 cup ranch dressing
  • Fresh parsley chopped, to taste (optional)

Instructions

  1. Prepare the ranch dressing first and refrigerate until ready.
  2. Boil salted water in a large pot for the pasta. Cook pasta according to the package instructions, then rinse under cool water and drain.
  3. Cut bacon into small pieces and cook until crispy, then transfer to a paper towel-lined plate.
  4. Chop onion, chicken, tomatoes, and parsley (if using), and combine in a large salad bowl. Add the cooked pasta and bacon.
  5. Toss the mixture with ranch dressing, starting with 1/2 cup and adjusting to taste. Season with salt and pepper as needed. Serve immediately or refrigerate before serving.

Notes

Feel free to add other vegetables like bell peppers or corn for added flavor.
This dish can be made ahead of time and stored for up to two days in the refrigerator.
