Description

Chicken Marbella features a delightful blend of garlic, olives, and prunes. This effortless recipe guarantees a moist and flavorful chicken that’s perfect for a quick dinner or special occasions.


Ingredients

  • 8 chicken thighs
  • 4 cloves garlic
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup brown sugar
  • 1/2 cup green olives
  • 1/2 cup pitted prunes
  • 2 tablespoons capers
  • Salt to taste
  • 1/2 cup white wine
  • Chopped parsley for garnishing

Instructions

  1. Peel and chop the garlic cloves. Use a mini food processor if available.
  2. In a large glass or ceramic bowl, combine the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add the green olives, pitted prunes, capers, a pinch of salt, and chicken thighs. Mix until the chicken is well coated in the marinade.
  4. Cover the bowl with plastic wrap and refrigerate overnight or for at least 3 hours.
  5. Preheat your oven to 180C (350F).
  6. Arrange the chicken with the marinade on a large baking pan. Pour white wine around the chicken, being careful not to hit the chicken.
  7. Roast in the oven for 50 minutes to 1 hour, until the chicken is cooked through and the skin is golden. The internal temperature should reach 74C (165F).
  8. Before serving, sprinkle chopped parsley on top.

Notes

Marinating the chicken overnight enhances the flavor.
Serve with crusty bread to soak up the delicious sauce.
For a twist, try using chicken breasts instead of thighs.
