- 8 chicken thighs
- 4 cloves garlic
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 cup brown sugar
- 1/2 cup green olives
- 1/2 cup pitted prunes
- 2 tablespoons capers
- Salt to taste
- 1/2 cup white wine
- Chopped parsley for garnishing
Instructions
- Peel and chop the garlic cloves. Use a mini food processor if available.
- In a large glass or ceramic bowl, combine the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, a pinch of salt, and chicken thighs. Mix until the chicken is well coated in the marinade.
- Cover the bowl with plastic wrap and refrigerate overnight or for at least 3 hours.
- Preheat your oven to 180C (350F).
- Arrange the chicken with the marinade on a large baking pan. Pour white wine around the chicken, being careful not to hit the chicken.
- Roast in the oven for 50 minutes to 1 hour, until the chicken is cooked through and the skin is golden. The internal temperature should reach 74C (165F).
- Before serving, sprinkle chopped parsley on top.
Notes
Marinating the chicken overnight enhances the flavor.
Serve with crusty bread to soak up the delicious sauce.
For a twist, try using chicken breasts instead of thighs.
