- 1 cup whole wheat flour, or sub all purpose
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 tbsp honey
- 3 tbsp plain yogurt
- 1 cup almond milk, or milk of choice
- 2 tbsp chia seeds
- 2 tbsp plain yogurt
- 1 tsp lemon zest
- 1/4 cup blueberries
Instructions
- In a large bowl, whisk together eggs, honey, yogurt, and milk.
- Add flour, baking soda, and chia seeds to the mixture, whisking until combined.
- Let the pancake batter rest for 10 minutes to allow the chia seeds to soak.
- Heat a nonstick griddle or skillet over medium-low heat.
- Using a 1/4 cup measuring cup, pour the batter onto the skillet.
- Wait for the batter to bubble (about 1-2 minutes), then flip the pancake with a spatula.
- Cook on both sides until golden brown, repeating until all batter is used.
- For the topping, stir lemon zest into yogurt and serve on top of pancakes with blueberries.
Notes
Letting the batter rest enhances the texture of the pancakes.
Feel free to substitute almond milk with your preferred milk alternative.
