Description

Dive into this Cheesy Ranch Chicken Casserole featuring tender chicken, zesty ranch flavor, and creamy cheese. It’s perfect for a quick dinner or a comforting family meal.

Ingredients

Scale
  • 6 large boneless skinless chicken breasts
  • 1 tablespoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 cup all-purpose flour
  • 6 tablespoons unsalted butter, divided
  • 1 packet dry ranch seasoning (1 ounce / 2 tablespoons)
  • 1 medium white onion, finely diced
  • 1 can cream of chicken soup (10.75 ounces)
  • 1 cup heavy whipping cream
  • 2 cups sharp cheddar cheese, shredded, divided
  • 8 slices bacon, cooked, crumbled, divided

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a small bowl, combine paprika, salt, pepper, and garlic powder, seasoning both sides of the chicken breasts and rubbing it in well.
  3. Place flour on a small plate or bowl and dredge each seasoned chicken breast until coated, shaking off excess flour.
  4. Melt 4 tablespoons of butter in a large skillet over medium heat. Cook the chicken breasts for about 4 minutes per side until golden. Transfer to the baking dish.
  5. Add the remaining 2 tablespoons of butter to the skillet and cook the diced onion for 5 to 8 minutes until softened.
  6. Stir in the ranch seasoning and cook for 30 seconds, then add cream of chicken soup and heavy cream, whisking until smooth.
  7. Mix in 1 cup of shredded cheddar cheese until melted and creamy, followed by about ½ cup of cooked bacon, saving the rest for topping.
  8. Pour the sauce evenly over the chicken in the baking dish and bake uncovered for 40 minutes.
  9. Once done, sprinkle with the remaining 1 cup of cheddar cheese and the rest of the bacon, then return to the oven for an additional 5 to 10 minutes.
  10. Ensure the chicken reaches an internal temperature of 165°F and let it rest for 5 to 10 minutes before serving.
