Description

These Caramel Apple Cheesecake Bars combine creamy cheesecake and caramel-rich apples on a crunchy crust. Perfect for gatherings, they are easy to make and irresistible!

Ingredients

Scale
  • 1 3/4 cups Flour
  • 1/2 cup Brown Sugar
  • 3/4 cup Butter, Softened
  • 2 (8 oz) packages Cream Cheese, Softened
  • 1/2 cup Sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 3 cups Apples (Peeled & Diced)
  • 2 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 cup Flour
  • 1/2 cup Quick Oats
  • 2/3 cup Brown Sugar
  • 1 1/2 tsp Cinnamon
  • 1/2 cup Butter, Melted
  • Caramel Sauce

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
  2. In a small bowl, combine flour, brown sugar, and softened butter to make the shortbread crust. The mixture should be crumbly.
  3. Press the crust mixture into the prepared pan and bake for 20 minutes.
  4. In a medium bowl, beat together softened cream cheese, sugar, and vanilla to create the cream cheese layer. Add in eggs and mix well. Set aside.
  5. Peel the apples, core them, and dice to make 3 cups. In a mixing bowl, combine apples with brown sugar, cinnamon, and nutmeg. Set aside.
  6. Make the streusel layer in a medium bowl by mixing flour, quick oats, brown sugar, cinnamon, and melted butter until thick and clumpy.
  7. Once the crust is done, let it cool for 10 minutes.
  8. Spread the cheesecake layer evenly over the crust. Distribute the apple mixture over the cheesecake layer, then sprinkle the streusel evenly on top.
  9. Bake for 30-40 minutes, until the cheesecake is set.
  10. Let the bars cool, then refrigerate. Serve cold with caramel sauce drizzled over each piece.

Notes

For a sweeter flavor, increase the amount of caramel sauce when serving.
Ensure the cream cheese is softened to room temperature for easier mixing.
These bars can be made a day in advance for convenience.
