Description

These Burger Bowls with Chipotle Ranch Sweet Potato Fries combine the rich taste of ground beef, creamy chipotle ranch, and crispy sweet potatoes, making it a delicious and easy meal option for any night.


Ingredients

  • ½ cup sour cream (or plain Greek yogurt)
  • ⅓ cup mayonnaise
  • ¼ cup buttermilk
  • 2 chipotle peppers in adobo sauce
  • 1 teaspoon garlic paste
  • 2 teaspoons Sazon seasoning
  • 2 teaspoons dried parsley
  • Kosher salt & fresh ground black pepper- to taste
  • 3 medium sweet potatoes, cleaned (pat dry) & sliced into wedges
  • 3 tablespoons olive oil, divided
  • 2 ½ tablespoons Creole Cajun Seasoning– homemade or store-bought, divided
  • 1 lb ground beef
  • ½ medium yellow onion, diced
  • ⅓ cup beef broth (or water as sub)
  • For bowl assembly: Chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, hamburger dill chips, and sliced avocado- as desired

Instructions

  1. In a blender or food processor, pulse together sour cream, mayonnaise, buttermilk, chipotle peppers, garlic paste, Sazon seasoning, parsley, and salt/pepper until smooth. Store in the refrigerator until ready to serve.
  2. Preheat the oven to 425°F. Line a baking sheet with foil or parchment paper, then set with a wire rack.
  3. In a bowl, mix sweet potato wedges, 2 tablespoons olive oil, and Cajun seasoning until well coated. Arrange on the baking sheet with the wire rack.
  4. Bake for 40 minutes until fork-tender and crispy.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add ground beef, breaking it up until browned, then stir in the diced onion and cook until translucent, about 3-4 minutes. Season with remaining Cajun seasoning, then add beef broth and let it simmer until liquid is mostly absorbed.
  6. In serving bowls, layer romaine lettuce and sweet potato wedges, then top with beef and desired toppings. Drizzle chipotle ranch on top.

Notes

To enhance the flavors, marinate the sweet potato wedges in olive oil and Cajun seasoning for about 30 minutes before baking.
Use Greek yogurt instead of sour cream for a healthier option without sacrificing creaminess.
Substitute ground turkey or chicken if you prefer a leaner meat option.
