- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 & 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
- 3/4 cup chopped cadbury mini eggs
Instructions
- Preheat your oven to 325F and line baking sheets with parchment paper.
- In a medium saucepan, melt the butter over medium heat, stirring occasionally until it becomes golden brown and gives off a nutty aroma. Allow it to cool in a separate bowl.
- Whisk the brown sugar and granulated sugar into the brown butter until mixed well. Then, add the egg and vanilla extract, whisking until smooth.
- In another bowl, combine the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the mini chocolate chips and the chopped Cadbury mini eggs gently.
- Using a large cookie scoop or spoon, drop rounded balls of dough onto the prepared baking sheets.
- Bake for about 13 minutes until the edges are set and the centers remain slightly soft.
- Remove from the oven, let cool for 5 minutes on the baking sheets, then transfer cookies to a wire rack to cool completely.
Notes
For lighter cookies, don’t overmix the dough.
Store the cookies in an airtight container for up to a week.
