These Blueberry Pie Bars feature a buttery oat crust and a luscious blueberry filling, offering a scrumptious homemade treat perfect for gatherings or a cozy dessert at home.

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal; set aside.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla, and mix well.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another large bowl, combine the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust. Sprinkle the remaining ⅓ of the crust mixture over the blueberries.
- Bake in the oven for 55 minutes, or until the blueberries are bubbling and the crust is golden. Allow to cool completely in the pan before using the parchment paper to lift out. Slice into 9 bars and serve.
Notes
For best results, use fresh blueberries for maximum flavor.
These bars can be stored in an airtight container in the refrigerator for up to 3 days.
Feel free to substitute with other berries like raspberries or blackberries.
