Description

These Blueberry Muffin Bites are bursting with flavor and super easy to make. With fresh blueberries and a simple batter, they’re perfect for breakfast or as a delightful snack!


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 2 eggs
  • 8 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
  2. In a medium bowl, combine flour, sugar, baking powder, and salt; mix thoroughly.
  3. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
  5. Gently fold in the blueberries into the batter.
  6. Spoon the batter into the muffin liners, filling each about two-thirds full.
  7. Bake for 10-12 minutes until lightly browned and a toothpick comes out clean when inserted into the center.
  8. Let cool before serving; optionally, top with a vanilla glaze.

Notes

Ensure not to over-mix the batter to maintain fluffiness.
These muffin bites can be stored in an airtight container for up to 3 days.
