Description

These Blueberry Lemon Bars are a delightful blend of sweet and tart flavors, featuring fresh blueberries and a zing of lemon. Easy to prepare, they make a wonderful dessert for any occasion, especially picnics or family gatherings!


Ingredients

  • 2 cups all purpose flour
  • 1 cup unsalted butter room temperature
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup all purpose flour
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest optional
  • 1 cup fresh blueberries

Instructions

  1. Combine the flour, salt, and powdered sugar in a medium bowl. Cut in the butter until the mixture is crumbly.
  2. Grease a 9×13 inch baking pan with cooking spray or butter, then press the crust mixture firmly into the bottom of the pan.
  3. Bake at 350°F for 18-20 minutes or until light golden brown. Remove from the oven and let cool.
  4. In a separate bowl, whisk the eggs, then add the sugar and flour, mixing well. Stir in the lemon juice and optional lemon zest, mixing until fully incorporated. Pour this mixture over the cooled crust and sprinkle blueberries on top.
  5. Bake for another 20-25 minutes until the top is just beginning to turn golden brown. Remove from the oven and cool slightly on a wire rack.
  6. Once slightly cooled, refrigerate for at least 2 hours before serving. Dust with powdered sugar and cut into bars.

Notes

Make sure to use fresh blueberries for the best flavor.
You can substitute the lemon juice with lime juice if desired.
These bars can be stored in the refrigerator for up to 3 days.
