- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350 degrees and prepare a 9 x 13 inch pan with non-stick spray.
- In a mixing bowl, combine softened butter, sugar, and brown sugar. Mix in baking soda, salt, flour, and quick oats.
- Press half of the mixture evenly into the bottom of the prepared pan and bake for 13 minutes.
- While the bottom layer bakes, prepare the filling by beating softened cream cheese with sweetened condensed milk until smooth, then mix in vanilla and egg yolk.
- After baking the bottom layer, spread the cream cheese mixture evenly over it.
- Top the cream cheese mixture with blueberries.
- Sprinkle the remaining oat mixture on top and press down lightly.
- Bake for 20-25 minutes or until the edges are golden brown.
- Allow to cool completely before cutting into bars.
Notes
Make sure your butter and cream cheese are softened for easy mixing.
These bars can be stored in the refrigerator for up to five days.
Consider adding a sprinkle of powdered sugar on top before serving for extra sweetness.
